½ tsp baking soda
¼ tsp salt
½ cup (115g) unsalted butter, softened
2 large eggs
½ cup (120ml) buttermilk
1 ½ tsp vanilla extract
1 tbsp cocoa powder (for a slight velvet richness)
1 tsp white vinegar
½ tsp baking powder
Purple gel food coloring (as desired)
For the Frosting:
1 cup (230g) unsalted butter, softened
3 cups (360g) powdered sugar
2 tbsp heavy cream (or milk)
1 tsp vanilla extract
Purple food coloring (optional for extra color)
Directions
- Prepare & Preheat
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Make the Batter
- In a bowl, whisk together flour, baking soda, baking powder, cocoa powder, and salt.
- In another large bowl, beat the butter and sugar until light and fluffy.
- Add the eggs, one at a time, then mix in vanilla and vinegar.
- Alternate adding the dry ingredients and buttermilk, starting and ending with the dry mix.
- Stir in purple food coloring until you reach your desired shade.
- Bake
- Fill cupcake liners 2/3 full and bake for 18–20 minutes.
- Insert a toothpick—if it comes out clean, they’re done! Let them cool completely.
- Make the Frosting
- Beat butter until creamy.
- Gradually add powdered sugar, mixing well.
- Add vanilla and heavy cream, beating until fluffy.
- Tint with purple food coloring if desired.
