    • 3/4 cup (150g) granulated sugar
    • 1/4 cup (50g) brown sugar
    • 2 large eggs
    • 1/3 cup (30g) cocoa powder
    • 1/2 cup (65g) all-purpose flour
    • 1/4 tsp salt
    • 1/2 tsp vanilla extract
  • For the Chocolate Mousse:
    • 1 cup (175g) dark chocolate, chopped
    • 1 1/4 cups (300ml) heavy cream, divided
    • 1/4 cup (30g) powdered sugar
  • Optional Toppings:
    • Chocolate ganache
    • Whipped cream
    • Chocolate shavings

Directions

  • Step 1: Prepare the Brownie Base
    • Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
    • Melt the butter in a medium saucepan over low heat. Remove from heat, then whisk in the sugars until smooth.
    • Stir in the eggs, one at a time, followed by the vanilla extract.
    • Add the cocoa powder, flour, and salt, mixing until just combined. Avoid overmixing.
    • Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely.
  • Step 2: Make the Chocolate Mousse
    • Melt the chopped chocolate in a heatproof bowl over simmering water or in the microwave in short intervals. Let it cool slightly.
    • Whip 1 cup of heavy cream with the powdered sugar until medium peaks form.
    • Fold the cooled chocolate into the whipped cream gently until smooth and well combined.
  • Step 3: Assemble the Dessert
    • Spread the chocolate mousse evenly over the cooled brownie base.
    • Chill in the refrigerator for at least 2 hours, or until the mousse is set.
  • Step 4: Add Toppings (Optional)
    • Prepare a simple ganache by melting 1/2 cup (85g) of chocolate with 1/4 cup (60ml) of heavy cream. Pour over the mousse layer and smooth with a spatula.
    • Garnish with whipped cream or chocolate shavings before serving.

Tips for Success

  • Brownie Texture: Slightly underbake the brownie layer for a fudgier base that contrasts beautifully with the mousse.
  • Cooling Time: Ensure the brownie base is fully cooled before adding the mousse to prevent it from melting.
  • Mousse Folding: Be gentle when folding the chocolate into the whipped cream to maintain the mousse's airy texture.
  • Chilling: Let the assembled dessert chill thoroughly for clean slices and a perfect set.
  • Toppings: Add toppings just before serving to keep them fresh and vibrant.
